Tofu and Cheesy Cauliflower: Low Carb, High Protein, Gluten Free Easy Dinner Recipe


Ingredients:

  • Two packages organic tofu - drained of water and patted dry (let it sit out for at least an hour so it’s not so mushy)

  • ¼ cup non-dairy plant butter

  • ¼ cup olive oil plus two tablespoons olive oil 

  • Olive oil or avocado cooking spray

  • Two packages pre-chopped cauliflower 

  • Salt and Pepper

  • 2 tablespoons chopped garlic 

  • 2 teaspoons organic Italian seasoning 

  • 1 tablespoon garlic powder 

  • One teaspoon pure maple syrup 

  • ¼ cup gluten free organic soy sauce (DO NOT get the soy sauce with gluten, it is sketchy and you will regret this later)

  • 1/2 cup shredded organic cheddar cheese

  • Two tablespoons balsamic vinegar 

  • Three tablespoons water 

Directions:

Preheat oven to 400 degrees.

Drain the tofu, press down on it with a plate or cooking board to get the water out. Let it dry for at least 30 minutes. Chop into small bite sized square pieces. Mix together the garlic powder, soy sauce, 1 tablespoon balsamic, ¼ c olive oil, 1 tsp pure maple syrup, salt, 1 tsp Italian seasoning, pepper in a bowl. Spray a baking sheet or two with cooking spray. Coat the tofu in the sauce and spread out on the baking sheet(s). Cook tofu for 20 minutes at 400 degrees. 

Get a large casserole/baking dish and coat it with cooking spray and two tablespoons olive oil. Add the cauliflower, chopped garlic, 1 tsp Italian seasoning, salt, pepper, cheese, butter, one tablespoon balsamic, three tablespoons of water, and mix it up. If you want to go crazy, add more cheese. Cook 30 minutes at 400 degrees. 

This is an original recipe, even my picky eater son will eat the tofu! Healthy, easy vegetarian dinner recipe, no meat, high protein, low carb, high fiber recipe. Yummy!

Approx 5 servings @ 25 grams protein, 300 calories and virtually no carbs
