Italian White Bean Veggie Bake Recipe: Healthy, Low Carb, Gluten Free, One Pan Dinner Recipe
Throw everything into a pan and walk away (just remember to come back)!
Ingredients
one bag broccoli, one bag cauliflower, pre-chopped
petite baby carrots, about half a bag
2 cans cannellini beans, could also add or swap for
garbanzo beans (rinsed)
Garlic
1/2 cup Plant butter (non-dairy)
3 tablespoons olive oil
One tablespoon Rosemary + Italian seasoning
half cup of water
1/4 cup Pumpkin seeds
2 Chopped tomatoes
1/2 cup or more of organic cheese for fun!
Throw into large casserole dish + mix it up and bake in over at 400 degrees for about 40 minutes or so.
Makes about 4 servings, approx. 305 cals, 8 grams carbs, 11 grams protein per serving. Could add more cheese, beans, and/or pumpkin seeds for more protein.
