Italian White Bean Veggie Bake Recipe: Healthy, Low Carb, Gluten Free, One Pan Dinner Recipe

Throw everything into a pan and walk away (just remember to come back)!

  • Ingredients

    • one bag broccoli, one bag cauliflower, pre-chopped

    • petite baby carrots, about half a bag

    • 2 cans cannellini beans, could also add or swap for

      garbanzo beans (rinsed)

    • Garlic

    • 1/2 cup Plant butter (non-dairy)

    • 3 tablespoons olive oil

    • One tablespoon Rosemary + Italian seasoning

    • half cup of water

    • 1/4 cup Pumpkin seeds

    • 2 Chopped tomatoes

    • 1/2 cup or more of organic cheese for fun!

Throw into large casserole dish + mix it up and bake in over at 400 degrees for about 40 minutes or so.

Makes about 4 servings, approx. 305 cals, 8 grams carbs, 11 grams protein per serving. Could add more cheese, beans, and/or pumpkin seeds for more protein.
